Molletes are simply a bolillo, a small Mexican roll, cut in half, with some of the breading scooped out and replaced with black beans topped with cheese. National Bean Day is January 6. We celebrate with molletes.

Along with the Pina Colada, the Coquito is Puerto Rico's gift to the cocktail-loving world. Like the Pina Colada, the Coquito is rum-based, and Don Q distillery in Puerto Rico has successfully lobbied to have the first annual National Coquito Day declared on December 21, 2018.

My dad used to make a kind of sardine salad, which transformed the fish to a tasty slush through vigorous fork-mashing. Mixing in some sliced sweet pickles (yes, for some reason, sweetness works with sardines), my dad made an inexpensive fish salad that we'd spread on bread.
