The Basque cake at Hubbard Inn, Hedin told us, is the culmination of different recipes he's made over the years, explaining, "I've got a nontraditional take on it by placing a layer of vanilla pastry cream and chocolate ganache between the layers of cake, and finishing the top layer with cinnamon sugar and lemon zest. It's garnished with a simple vanilla Chantilly."

I can't see anything wrong with restaurant owners denying service to those who support a regime that appears to them to be unethical and cruel. However, if Miller, Nielsen or Sanders showed up at a Maxwell Street taco stand, I wouldn't harass them, even though I judge them to be the biggest danger to this American life since the Civil War.

On the East Coast, where lobster is plentiful, the lobster roll is a popular preparation, usually just the lobster meat, mayonnaise, parsley, celery (stalks or salt), salt and pepper, mixed together and laid into a lightly toasted, buttered bun that's split on top rather than along the side. It used to be a little challenging to find lobster rolls in the Midwest, but now they're on many menus.

Recently, I toured the cheese selection at Sugar Beet with Joey Stawski, the resident cheese monger, and Lissa Dysart, who worked at Marion Street Cheese Market and now does marketing for Sugar Beet. Together, we tasted several cheeses that might be a little more expensive but that provide fair value along with more flavor and textural dimension than you'd find in low-cost, lower-quality commodity cheeses.
